Equipment

  • 1 Instant Pot

Ingredients
  

  • 1 lb Minced turkey or ground sausage
  • 1 Small onion chopped
  • 1 tsp Minced garlic
  • 2 cans Tomato paste
  • 3 tbsp Italian seasoning
  • 8 cups Beef broth
  • ¾ cup Heavy cream
  • 3 cups Spinach chopped
  • 1 cup Carrots
  • Olive oil
  • 1 kg Cheese tortellini

Instructions
 

  • Turn Instant Pot on saute mode. Drizzle some olive oil in the inner pot, toss in the chopped onion and minced garlic.
  • Let saute for about 2 minutes, then add in the minced turkey (or ground sausage).
  • While the minced turkey is frying up, chop up your carrots to the way you like them. 
  • Once the minced turkey is cooked, add in both cans of tomato paste and Italian seasoning and stir. 
  • Pour in 4 cups of beef broth and package of cheese tortellini. Give a good stir. 
  • Place lid on the Instant Pot, make sure the vent is set to natural release. Set the Instant Pot to manual pressure for 4 minutes. 
  • Reminder, the Instant Pot does take a few minutes to come up to temperature. It will take approximately 6-7 minutes to come up to pressure. 
  • Once it's done cooking, let the Instant Pot naturally release for 5 minutes. Then manually let it finish releasing (only takes approximately 2 minutes). 
  • Remove the lid, give a little stir. Set to saute mode again.
  • Then add in the rest of the beef broth ( 4 cups), and the spinach. Give a good stir. 
  • The spinach will begin wilting instantly and will continue wilting and getting to the perfect texture while you're finishing it up.
  • Pour in the heavy cream and continue stirring. The soup will begin to thicken up to a creamy consistency. You can add more cream if you prefer a thicker soup. 
  • Serve immediately with a baguette.

You could easily switch this soup up a little bit to your liking as well. Swap out the spinach for kale, or maybe leave out the carrots and add a different vegetable you like (or no other vegetable). You could add more or less cream depending on how thick you like the consistency.
