  • 1 Instant Pot
  • 1 paper towel
  • 1 small bowl
  • 1 mixing bowl

  • 7 Eggs
  • 3 slices Bacon
  • ½ cup Spinach

  • Begin by pan-frying your bacon slices. You could chop the bacon before you fry it or after. I personally chop it up before I fry it, I just find that works easier for me.
  • While the bacon is frying up, spray your silicone 'egg bites mold.'
  • Once your bacon is cooked, place on a paper towel and pat the grease off of it.
  • Chop up your spinach and set aside.
  • Next, you want to grab a small bowl and mix up 1 egg at a time. I find it easier to pour into the silicone mold if I only mix one at a time. You could easier mix them all into a bowl or measuring cup if thats what works for you. Also, I like to add a splash of milk in with each egg, this is also totally up to you and your preference.
  • Pour the egg into the silicone mold, and continue until all the molds are filled with egg.
  • Take the chopped spinach and chopped bacon pieces, place a little bit of each into each egg mold. You will have to press them down into the egg a little bit, be gentle.
  • Place the silicone mold into the Instant Pot on top of the trivet.
  • Add the lid to the Instant Pot, make sure to close it and set it to seal.
  • Set the Instant Pot to manual pressure for 4 minutes.
  • Once done, let naturally release - this will take approximately 4 minutes.
  • Remove the lid, and let cool for a few minutes before removing from the pot.
  • Once cooled down, store in an airtight container in the fridge for up to 4 days.

To heat them up, just place them on a plate and microwave for 30-second intervals.

Cooking Tips

Instant Pot Spinach Egg Bites

Now, on to some helpful tips to ensure your Instant Pot Spinach Egg Bites turn out fantastic every time.

  • Quality of Ingredients: The foundation of any great dish lies in the quality of its ingredients. Always use fresh spinach and quality eggs for these egg bites. Fresh spinach not only provides a vibrant color but also packs a nutritional punch. As for the eggs, opt for organic or free-range ones if possible. They tend to have a richer flavor which can significantly enhance the taste of your egg bites. Trust me, it makes all the difference.
  • Spices: Don’t shy away from adding your favorite spices. A dash of paprika or a sprinkle of garlic powder can elevate the flavor profile. You could also experiment with other spices like cumin, turmeric, or even a pinch of cayenne pepper for a spicy kick. Remember, the key is to start with a small amount and adjust according to your preference.
  • Perfect Timing: Cooking times can vary based on your Instant Pot model, so keep an eye out until you find your sweet spot. It’s always better to undercook than overcook as you can always add more cooking time. But once they’re overcooked, there’s no going back. Start by following the recommended cooking time in the recipe and adjust as necessary in subsequent batches.
  • Proper Mixing: Ensure that your spinach and eggs are well mixed before pouring into the molds. This ensures an even distribution of spinach in each bite.
  • Use of Molds: Silicone molds work best for these Instant Pot Spinach Egg Bites. They’re non-stick, flexible, and make it easy to pop out the egg bites once they’re done. If you don’t have silicone molds, you can use muffin tins but make sure to grease them well.

You can enjoy them hot right out of the pot or at room temperature, making them a convenient option for those busy mornings.

  • For a balanced meal, consider pairing them with a side of fresh fruit for added nutrition. The sweetness of the fruit complements the savory flavor of the egg bites, creating a delightful contrast. You could go for berries, bananas, or even a tropical fruit salad.
  • If you’re planning a brunch spread, these egg bites would fit right in. Consider serving them alongside some crispy bacon and toasted bread. The smoky flavor of the bacon and the crunchiness of the toast add different textures to your meal, making it more enjoyable.
  • But don’t limit these egg bites to just breakfast or brunch. They also make a great protein-packed snack in between meals. They’re easy to pack and carry, so they’re perfect for school lunches or office snacks.
  • Feeling adventurous? Try topping them with some salsa or avocado for a Mexican twist. The tanginess of the salsa and the creaminess of the avocado add layers of flavor to the egg bites. You could also sprinkle some shredded cheese on top and broil them for a few minutes until the cheese is melted and bubbly for a cheesy delight.
  • For dinner, you could serve these egg bites as a side dish. Pair them with a light salad and some roasted vegetables for a wholesome meal. Or, use them as a filling for wraps or sandwiches.
