  • 1 Instant Pot
  • 1 paper towel

Ingredients
  

  • 7 Eggs
  • 3 slices Bacon
  • ½ cup Spinach

  • Begin by pan-frying your bacon slices. You could chop the bacon before you fry it or after. I personally chop it up before I fry it, I just find that works easier for me. 
  • While the bacon is frying up, spray your silicone 'egg bites mold.'
  • Once your bacon is cooked, place on a paper towel and pat the grease off of it. 
  • Chop up your spinach and set aside. 
  • Next, you want to grab a small bowl and mix up 1 egg at a time. I find it easier to pour into the silicone mold if I only mix one at a time. You could easier mix them all into a bowl or measuring cup if thats what works for you. Also, I like to add a splash of milk in with each egg, this is also totally up to you and your preference. 
  • Pour the egg into the silicone mold, and continue until all the molds are filled with egg. 
  • Take the chopped spinach and chopped bacon pieces, place a little bit of each into each egg mold. You will have to press them down into the egg a little bit, be gentle. 
  • Place the silicone mold into the Instant Pot on top of the trivet. 
  • Add the lid to the Instant Pot, make sure to close it and set it to seal. 
  • Set the Instant Pot to manual pressure for 4 minutes.
  • Once done, let naturally release - this will take approximately 4 minutes. 
  • Remove the lid, and let cool for a few minutes before removing from the pot. 
  • Once cooled down, store in an airtight container in the fridge for up to 4 days.
