Equipment

  • 1 medium-sized bowl
  • 1 small bowl or measuring cup

Ingredients
  

  • 1 can Lentils 540ml
  • 2 Red bell peppers
  • 1 Red onion
  • 1 English cucumber
  • 225 g cherry tomatoes
  • 1 tbsp Minced garlic
  • ½ cup Fresh parsley
  • 150 g Feta cheese crumbled
  • ½ cup Olive oil
  • ½ cup Apple cider vinegar
  • 2 tbsp Lemon juiceSalt to taste
  • Salt to taste
  • Pepper to taste

Instructions
 

  • Drain and rinse the can of lentils and pour them into a medium-sized bowl.
  • Dice up the red bell peppers, the cucumber, and the red onion. Throw them into the bowl.
  • Cut the cherry tomatoes in half and toss them into the bowl.
  • Toss in the minced garlic, and feta cheese. Mix everything together.
  • In a small bowl or measuring cup, mix together the olive oil, cider vinegar, and lemon juice.
  • Pour oil mixture over the lentil mixture, and mix it together.
  • Top it off with fresh parsley, salt, and pepper.

Notes

The bell peppers don’t have to be red, you could use yellow or orange as well. I don’t recommend using a green bell pepper as it will make a taste difference.
Make sure you rinse your lentils! Trust me, they leave a funky taste in the salad if not rinsed.
Don’t have cherry tomatoes? Grape tomatoes work great too. If you really wanted to, you could also chop up a regular tomato. But, if you can grape/cherry tomatoes work best.
