Ingredients
  

  • 2 cups All-purpose flour
  • 2 tsp Baking powder
  • 2 tsp Baking soda
  • tsp Cinnamon
  • ¼ tsp Nutmeg
  • ½ tsp Salt
  • ¼ tsp Ginger
  • ¼ tsp ground cloves
  • ¾ cup Vegetable oil
  • 4 Eggs
  • cups Brown sugar
  • ½ cup White granulated sugar
  • ½ cup Applesauce
  • 1 tsp Vanilla extract
  • 2 cups Grated carrotsINSTRUCTIONS

Instructions
 

  • Pre-heat oven to 350F.
  • In a medium-sized bowl mix together flour, baking powder, baking soda, cinnamon, ground cloves, ginger, nutmeg, salt, brown sugar, and white sugar. 
  • In a separate bowl, mix together vegetable oil, eggs, applesauce, and vanilla extract. 
  • Once the wet mixture is well mixed, add in the grated carrots and mix in just until combined. 
  • Pour the dry mixture into the wet mixture and mix together until just combined. Don't over mix. 
  • Bake in the oven at 350F for around 35 minutes (baking times may vary depending on appliances).

Something else I want to mention is that you should use regular carrots and grate them yourself. I know this is boring and time-consuming but it works so much better in the bread. I’ve tried using the pre-cut, pre-shredded carrots from the grocery store before and I find it makes the bread dry out a little more. Not sure why, but defiantly not the best for this recipe.
